After getting a taste of this at a local coffee shop, I immediately decided to make one at home. This is my version of Mushroom Omelette. :)
Of course we need the basics:
Eggs - I used three since there were three of us eating.
Brown Onions - I love these kind for omelettes, the violet onions are just too flavourful for me.
Shiitake Mushrooms - Any kind of mushroom will do but I wanted to try something new! :)
Cheese, salt, and basil leaves to to taste.

First, sauté the onions until it is transparent, add the mushrooms tossing the veggies around for a good five minutes. Sprinkle with black ground pepper and salt to taste. Remove vegetables from the pan and let it cool in a separate container.
Using the same pan, cook your eggs making sure that it forms a circle. When the bottom half is golden brown, add the mushroom mix and cheese (as much as you want) to half of the egg. Use the other half to seal the omelette creating something similar to a half moon. Sprinkle with basil leaves to taste.
